Sushi Cooking Books

When I first started cooking sushi I never used cooking books, but as my skills have progressed and I started exploring new cooking techniques, I started to purchase Japanese cooking books to see what new ideas or knowledge they contained.

The first cook book I bought was “Yo Sushi – the Japanese cookbook from Kimiko Barber” I chose this cook book out of the hundred’s available because I had gone to Yo Sushi restaurants and loved the experience, although in recent years I have only been disappointed by their restaurants, there seems to have been a drop in quality in all of the ones I visited! this maybe due to not enough quality control as the business has grown so large. Any way the Yo Sushi restaurant is another topic altogether, their cook book is quite good, beautifully designed, delicious well explained recipes and some innovative creations. If your looking for a first cook book to learn sushi I would definitely recommend the YoSushi cook book. Obviously you don’t need to buy a cook book because you can get allot of free recipes here on make sushi for free.

The next cook book I would recommend to get is “Sushi – Taste and Technique by Kimiko Barber and Hiroki Takemura”.  Sushi T&T is more of a purist sushi cooking book, illustrating allot more of the technique that goes in to traditional Japanese cuisine. It shows you how to treat the fish from whole to sashimi, it also teaches you how to create complex beautiful Japanese food, cooking the recipes in this book will make you seem like a Japanese master chef.

Now the final book I would recommend is “the complete book of sushi- by hideo Dekura, Brigid Treloar and Ryuich Yoshii”, the complete book of sushi has more westernized sushi recipes, including a plethora of fantastic sushi roll recipes. Allot of the recipes in this cook book, would be hard to find in your local sushi restaurant, but I find that’s why you want this book, to teach you new culinary horizons and explore the un-explored world of Japanese style cooking.

I’m shore there are many other great cook books out there but sadly I can’t buy all of them, so the above are the few I liked of the few I have. hope this helps someone, if you know of any other great Japanese cook books please leave your opinion in a comment below, thanks
